Miso Glazed Salmon

This Miso Glazed Salmon is so delicious & full of flavor. Our favorite way to enjoy this dinner time meal is to serve it with rice & steamed green beans or broccoli.
  • 1 1/4 pounds salmon cut into 4 fillets
  • 3 tablespoons white miso paste
  • 1/4 cup mirin can also use sake
  • 1 tablespoon brown sugar
  • 1 teaspoon minced ginger
  • 2 teaspoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sesame seeds black, white or both
  • 2 tablespoons green onions
  • cooking spray

Black Bean Soup

Offering a variety of toppings makes this hearty Black Bean Soup a crowd favorite. Please any picky eater by giving it a Tex-Mex twist by adding pico de gallo & tortilla strips, add thinly cut strips of steak for the carnivore or keep it simple with a few slices of avocado & queso fresco.
  • 1 1/2 tablespoons olive oil
  • 1 large onion
  • 2 large plum tomatoes
  • 2 teaspoons minced garlic
  • 2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 3 15-ounce cans black beans
  • 2 1/2 cups vegetable or chicken broth
  • Optional toppings: diced avocados, queso fresco, chopped cilantro, fresh lime juice, sour cream

Chicken Parmesan Pappardelle

I don’t think we need to say much about this beautiful Chicken Parmesan Pappardelle - just look at it!
  • 1 tablespoon olive oil
  • 3 cloves garlic
  • 1/2 teaspoon red pepper flakes
  • 1 1/4 pounds ground chicken (white or dark meat, or ground turkey)
  • 2 teaspoons dried Italian seasoning
  • 1 pinch kosher salt & freshly ground pepper
  • 1 26-ouncejar marinara sauce
  • 1 cup shredded Parmesan cheese, plus more to garnish
  • 1 cup shredded mozzarella cheese
  • 12 ounces pappardelle pasta
  • 1 handful small fresh basil leaves

Mini BBQ Cheddar Meatloaves

If you can describe dinner as “cute”, that’s how we’d describe these Mini BBQ Cheddar Meatloaves. We suggest serving with steamed broccoli or a fresh salad & mashed or baked potatoes.
  • 1 large sweet onion
  • 1 tablespoon butter
  • Salt & pepper
  • 1 pound lean ground beef
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup + 2 tablespoons BBQ sauce, divided
  • 1/4 cup bread crumbs
  • 2 ounces cheddar cheese
