Last week I was looking for an easy recipe that wouldn’t take up too much of my time. We were heading out for vacation the next day, I still needed to pack & I didn’t want to waste food or have leftovers hanging out in the fridge.
My solution, Spaghetti Squash Lasagne with Broccolini & all my goals were met. Swapping out the pasta for spaghetti squash (which is currently in season) even left me feeling a little healthy!
