As we welcome the start of Winter this week, I decided to share a new favorite recipe, Chicken Soup with Onions & Garlic.

By chance, my husband happened to have a mighty head cold when I decided to try this new recipe out. The timing couldn’t have been better. Onions, shallots & garlic are loaded with antioxidants & Vitamin C. Plus, chicken soup always feels good when you don’t.

I was a little intimidated by the thought of making my own chicken broth, I’ve never been responsible for a full bird of any kind. (Other than my childhood pet cockatiel, Spike.) Final opinion, it wasn’t bad! I’m sure I left lots of meat on the bones & I came across some kind of organ I wish I hadn’t had but the fear is gone.

Everyone loved it, and there were plenty of leftovers to last while I inevitably caught the head cold.
